This special lot is harvested from the Gatta farm where our Shantawene coffee is collected and dried. The anaerobic fermentation is a twist on the traditional natural process used on the Shantawene. It was first held in cherry form in anaerobic conditions to allow for a particular fermentation to occur. It was then dried like other natural processed coffees with the fruit still intact on raised beds. The result is an extra-fruity and sweet acidity, with well rounded body.

Gatta Farm is located in the Bensa District of Sidama, Ethiopia owned by the Dukamo Family. Their company, Daya Bensa has quickly become leaders in high quality coffee collection and curation winning them numerous accolades. Another lot of anaerobic coffee from Gatta Farm received 2nd place in the Cup of Excellence competition for Ethiopia. The farm is also home to Gafisse Washing Station which processes our Shantawene coffees as well. We've been featuring coffee from the Dukamo Family since 2018 and are excited to offer a variety of lots from them this year.
